Keynote Spotlight – Dr Mango Parker, Australian Wine Research Institute
We are delighted to welcome Dr Mango Parker, Senior Research Scientist at the Australian Wine Research Institute (AWRI), as our keynote speaker. Internationally renowned for her work in aroma and flavour chemistry, Dr Parker has led research into smoke taint, volatiles, phenolics, tannins, and the role of grape-derived glycosides in flavour release. Her PhD earned the Manfred Rothe Gold Prize for Excellence in Flavour Science (2019), recognising her impactful contribution to wine science. Her talk is titled “Lingering flavours, nasty and nice”. I will cover glycosides, flavour release-in-mouth and retronasal odor perception, how it’s important to understanding nasty smoke taint and how we can use glycosides to boost nice flavours in wine”.
